Canadian Snow Crab

Snow Crab (Chionoecetes opilio) from Canada’s Gulf of St Lawrence are the most highest regarded of all Snow Crab, due to their renown bright red colours and clean shells (often referred to as the Ferrari of Snow Crabs), which has made them a preference for US and Japanese markets. They are rich and sweet in taste with a delicate texture.

All Snow Crab processed by Captain Dans is 100% Wild Caught.

Annual catch quota is issued by the Canadian Government (Fisheries and Oceans Canada DFO) separately for First Nations (Traditional) and for Commercial Production. Commercial Production includes the areas of New Brunswick, Quebec, Nova Scotia, and Prince Edward Island. The fishery is highly managed and regulated and has maintained MSC accreditation. It is rated as highly effective by the Monterey Bay Aquarium Seafood Watch.

Production is by a HACCP based QA system and is Independently Audited. Product is processed only from live crabs, cooked by a continuous steam injection system and then frozen by continuous brine freezing, blast, CO2 or NO2, depending on the individual product specification.
