The species Lithodes santolla (also known as Lithodes antarcticus) refers to all King Crabs caught in the southern half of South America and includes four common species.
The King Crab is a Chilean product, caught and packed for Wild Oceans by Snowland – one of the largest, most respected seafood producers in Southern Chile. Located in Puerto Williams, Cape Horn, Snowland’s largest facility is the southern-most processing plant in the world.
With its snow-white meat and scarlet-red membrane, the Chilean King Crab meat is one of the most eye-catching crabs, and the largest of the subspecies. Its meat is delicate and sweet, and its shell is thin and easy to cut. This makes it the most popular of the King Crabs.
Snowland uses advanced, specialised processing, cooking and freezing equipment, to enhance product quality, ensure uniform cooking, and maintain moisture and flavour.
Sustainability & Management
The Chilean King Crab fishery is entirely managed by the governing body for all fishing activity in Chile, the National Fisheries and Aquaculture Service (Sernapesca).
Under the Fisheries and Aquaculture Act, Sernapesca is also responsible for enforcing policies related to species protection and environmental sustainability. Capture and landings are tightly controlled under these strict standards and policies.
