Dissostichus eleginoides, often referred to as Chilean Seabass or Silver Cod, this species is typically found in the southern waters of the Atlantic, Pacific, Indian and Southern Oceans on seamounts and sub-Antarctic continental shelves.
Our Artisanal Patagonian Toothfish (Dissostichus eleginoides) is caught from small vessels close to Chile’s southern coast. They are landed whole, gutted and kept on ice, and delivered to the Chilean mainland for processing and freezing. A rich and meaty fish with firm, white flesh, the Patagonian Toothfish has long been considered a luxurious fish for its flavour and texture. It is versatile and suitable for a range of cooking techniques.

Sustainability & Management
All commercial fishing activities are managed by the governing body for all fishing activity in Chile, the National Fisheries and Aquaculture Service (Sernapesca).
Fishing is predominantly by longline (baited hooks on a mainline) and strict legal fishing rules (including quota control for each region) are enforced for both by-catch protection and the overall resource conservation.
Like sea-frozen fisheries, these fisheries are subject to the Catch Documentation Scheme (CDS) which tracks the trade of Patagonian Toothfish from the point of unloading to the point of export market delivery.
As such, all legal exports are accompanied by a Dissostichus Catch Document (DCD) and Dissostichus Export Document (DED) which are verified and authorised by national authorities throughout the trade process.
